Thai shrimp salad with ginger and mint recipe details
Ingredients
150 ml | fish stock, or bottled clam juice |
750 g | medium shrimp, peeled and deveined |
5 tbsp | fresh lime juice |
2 tbsp | fish sauce |
1 tbsp | peanut oil |
1 tsp | sugar |
1 stalks | lemongrass, minced |
1 tbsp | peeled and minced fresh ginger |
1 small | chilli pepper, seeded and minced |
2 clove(s) | garlic, minced |
½ | cucumber, peeled, halved lenghtwise and cut crosswise into 1/2 cm slices |
1 small | red onion, thinly sliced |
5 g | mint, leaves only,cut into thin shreds |
5 g | fresh cilantro leaves |
6 | lime wedges |
salt and fresh ground pepper to taste |
Instructions
In a frying pan, bring the stock or clam juice to a boil. Add the shrimp, reduce the heat to low, cover and simmer for 1 minute. Stir lightly, cover again and cook until the shrimp curl and are firm to touch,1 minute longer.Using a slotted spoon, transfer to a bowl and let cool slightly. Cover and refrigerate until chilled, about 45 minutes. Discard the cooking liquid.
In a large bowl, whisk together the lime juice, fish sauce, peanut oil, sugar, lemongrass, ginger, chilli pepper, garlic, and salt and pepper to taste. Add the chilled shrimp, cucumber, onion, mint and cilantro. Toss well. Place the salad on a platter.
Garnish with lime wedges and serve.
