Thai Red Chicken Curry Recipe

1. Oil (2 tsp.)
2. Lemon Grass (2-3 stalks, 6 inches from the root)
3. Chicken on the bone, cut into 12-16 pieces ( 1 Kg)
4. Chopped Onion (1 large)
5. Thai red curry paste (50 gm)
6. Coconut Milk (200 ml)
7. Chopped Ginger (2 tsp.)
8. Palm sugar or brown sugar (1/2 tsp.)
9. Shrimp paste or powder (1 Tsp, use little at first)
10. Fish sauce (1-2 tsp.)
11. Hot Water (1-2 cups)
Method of preparation
1. In a non stick pan, heat oil. Add onion and ginger to it. Stir it till it becomes tender. Add 3-4 chicken pieces at a time. Saute it and add the Thai red curry paste when all the chicken pieces are sealed on top.
2. Add 1 cup of hot water. Now crush the lemon grass stalk, brown sugar and add it to the chicken. After that, add fish sauce and shrimp paste.
3. Cover the pan with the help of lid. Cook the chicken until it becomes soft. Then add coconut milk in it. If required add more water. After few minutes taste it and if needed add more fish sauce and shrimp paste. Serve it with boiled rice.
