Thai green chicken curry recipe details
Ingredients
2 tbsp | grapeseed oil |
2 ½ | cm piece fresh root ginger, finely chopped |
4 | shallots or 1 medium onion, chopped |
3 tbsp | thai green curry paste |
4 | chicken breasts, skinless/boneless, cut into bite-size pieces |
350 ml | coconut milk |
1 tbsp | fish sauce |
1 | green chilli, chopped |
fresh basil, for garnish |
Instructions
Heat oil in a wok over a low-medium heat and fry shallots/onion and ginger, stirring frequently, for 3-5 minutes until softened.Add curry paste and fry, stirring, for 2 minutes.
Add chicken and fry, stirring, until sealed.
Stir in coconut milk, bring to the boil, then reduce heat to low and simmer for 10 minutes.
Add chilli and fish sauce and simmer for about 5 minutes or until chicken is cooked through.
Taste and adjust seasoning if necessary. Serve with plain boiled rice and garnish with fresh basil leaves.
