|15 large||fresh green chilies, roughly chopped|
|10 clove(s)||garlic, roughly chopped|
|2 stalk(s)||lemon grass, roughly chopped|
|3||shallots or 1 small onion, roughly chopped|
|1 piece(s)||fresh root ginger, 5 cm, roughly chopped|
|1 tsp||shrimp paste|
|1 tsp||ground cumin|
|1 tsp||black peppercorns|
|2 tsp||ground coriander|
|3 tbsp||fresh basil|
|5 tbsp||fresh coriander|
|2 tbsp||olive oil|
|1||lime, juice and zest|
Blend all the ingredients into a paste. If you want it very hot, substitute a few scotch bonnets for some green chilies to spice it up.
