Ingredients
Serves: 4- 4 cups vegetable oil, for frying
- 2 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon poultry seasoning
- 2 teaspoons lime zest
- 2 cups buttermilk
- 2 1/2 cups flour
- 2 pounds chicken tenders
- Salt and pepper
Preparation method
Prep: 15 mins | Cook: 15 mins1. Pour oil into a deep skillet and set over medium-high heat.
2. While oil is heating: stir chili powder, paprika, garlic powder, onion, powder, poultry seasoning, and lime zest together in a mixing bowl. Pour buttermilk in a shallow pie pan, and flour in a second pan.
3. Divide the spice mixture between the buttermilk and the flour. Stir both well to incorporate.
4. Sprinkle chicken with salt and pepper. Coat each tender in buttermilk, then dip in flour. Coat each again in buttermilk and do a final dredge in flour.
5. Work in batches to fry the chicken tenders in hot oil, 3 to 4 minutes on each side to brown. Drain on paper towels, then serve.
