Ingredients
For the Batter: | |
2 medium | eggs, separated |
1 tbsp | plain flour |
550 ml | milk |
For the Filling: | |
150 g | prepared rhubarb, or any soft fruit, berries, peaches, plums etc |
1 tbsp | water |
3 tbsp | honey |
Instructions
Norfolk Pudding is a similar concept, other than the batter is a standard Yorkshire Pudding mix (omitting salt and pepper which are sometimes included) but the filling is always a mixture of apple, sugar and lard or butter.Beat the egg yolks in a bowl until light. Sift in the flour and gradually blend in the milk with a whisk.
Whisk the egg whites in a clean bowl until very stiff and fold gently into the batter.
Preheat the oven to Gas Mark 5, 190°C, 375°F.
Pour the batter into 4 or 6 hot buttered, ovenproof saucers (according to size) – you will need an even number.
Bake for 15 minutes or until set.
Meanwhile, stew the fruit in a small pan with the water and honey. Remove the baked batters from the oven and from the saucers and place on a serving dish. Divide the hot stewed fruit between 2 or 3 of the batters and use the remainder as lids.
Serve immediately.
