This recipe is from a local tavern that is well known for their beer battered fish. The batter gives the fish a thick, fluffy coating that even non-fish eaters like myself will like.

Ingredients
Serves: 4- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 tablespoon cornstarch
- salt to taste
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 2 eggs
- 3/4 cup milk
- 1/3 cup beer, more if needed
- 2 pounds cod fish fillets
- oil for frying
Preparation method
Prep: 10 mins | Cook: 10 mins1. In a medium bowl stir together flour, baking powder, baking soda, cornstarch, salt, garlic powder and cayenne pepper.
2. In a large bowl, beat together eggs and milk until smooth. Mix in beer. Stir in flour mixture. Mixture will be thick, but you can add more beer if you feel it is too thick.
3. In a deep fryer or a large heavy pan, heat oil to 375 degrees F.
4. Coat fish in batter and submerge in hot oil. Fry until golden brown, about 4 to 5 minutes. Cook in small batches until all fish is cooked.
