- Ingredients:
- 1/4 cup shortening
- 1 cup milk
- 1 egg
- 2 Tablespoons sugar
- 1 teaspoon salt
- 3 teaspoons baking powder
- 2 cups all-purpose flour
- Topping:
- 1/4 cup butter
- 1/2 cup brown sugar
- 1 Tablespoon molasses
- 1 teaspoon vanilla
Mix muffin batter by hand for fluffy muffins. Spoon muffins in deep muffin tin, not mini, to only half full. Put topping over muffin batter. Bake at 425 degrees for 20 to 25 minutes.
Yields: 12 muffins
