- Ingredients
- 1 cup butter
- 1 cup sugar
- 6 eggs
- 1 teaspoon vanilla
- 2 cups buttermilk
- 1-1/2 cups flour
- 2 Tablespoons baking powder
- 1 pound sweet potatoes (peeled, cooked, and mashed)
Preheat oven to 250 degrees and grease muffin tins well. Blend butter and sugar together. Add eggs, vanilla, milk, flour, baking powder, and sweet potatoes. Mix thoroughly. Pour the batter into the greased muffin tins. Fill 2/3 full. Bake 30 minutes.
