Tangy sausage stew with broccoli and tomatoes recipe details
Ingredients
500 g | broccoli |
2 clove(s) | garlic, minced |
500 g | ripe tomatoes, peeled, cored and sliced |
salt and freshly ground black pepper | |
4 | bangers, sliced |
4 tbsp | olive oil |
30 g | capers |
paprika powder | |
100 ml | vegetable stock |
Instructions
Cook the broccoli in salted water for 3-4 minutes. Drain.In a saucepan, fry the sausages until golden brown all around. Remove from the pan and set aside.
In a saucepan, heat the oil. Add the tomatoes and the garlic and cook stirring for some minutes. Pour in the stock and bring to a boil. Add the capers and reduce the heat. Stir in the cooked broccoli, and the sausages. Cook for a minute and season to taste with salt, pepper and paprika powder.
Serve with cooked pasta, potatoes or rice.
