Tangy cheese blintzes recipe details
- Ingredients:
- 1 recipe for basic crepes (16)
- 16 ounces part-skim ricotta cheese
- egg substitute equal to 2 eggs (1/2 cup)
- 3 Tablespoons confectioner’s sugar
- 2 teaspoons grated dried orange peel (we use Spice Island)
- 1 teaspoon vanilla
- 1/4 teaspoon orange extract
- 1/2 teaspoon cinnamon
Our guests love these cheese blintzes, made tangy by the addition of grated orange peel. As with all of our recipes, this has been modified to be low in saturated fat.
In a medium bowl, combine all filling ingredients, stirring until smooth. Place 1 crepe on flat surface. Spoon 2 Tablespoons of ricotta filling on the lower left-hand quarter of the crepe. Fold in half, and then in quarters, handkerchief fashion, with the filled quarter on the bottom. Repeat until all crepes have been filled, laying them in a single layer in baking dishes sprayed lightly with non-stick spray.
Bake in a 350 degree oven for 15 to 20 minutes, being careful not to over-brown. Cheese filling should be melted. Place 2 blintzes on a plate and garnish as desired. We especially enjoy serving this with a topping of fresh strawberries from the garden, but any seasonal fruit is wonderful!
Note: If crepes are made with Spelt, this is a good wheat-free entree.
