Tangy carrot and tomato dip recipe details
Ingredients
2 | onions, chopped |
120 g | celeriac, diced |
200 g | carrots, finely chopped or grated |
2 tbsp | oil |
8 tbsp | dry red wine |
2 tbsp | tomato puree |
1 can(s) | peeled tomatoes, diced |
salt and freshly ground black pepper | |
2 tbsp | honey |
cayenne pepper |
Instructions
In a saucepan heat the oil. Sauté the celeriac and the onions until lucent. Stir in the carrots and the tomato purée and cook stirring for 1-2 minutes.Deglaze with the wine and the tomatoes. Bring to a boil and cook for 5 minutes over medium heat. Season to taste with salt, pepper, cayenne pepper and honey.
Serve warm or cold with pasta or fresh bread.
