Beef tenderloin in morel sauce recipe details
Ingredients
25 g | dried morel mushrooms |
600 g | beef tenderloin |
4 tbsp | vegetable oil |
salt and pepper | |
100 ml | dry white wine |
200 g | crème fraîche or sour cream |
½ bunch(es) | fresh chives |
Instructions
Soak the morels in 1 cup of warm water.Cut the fillet in thin slices and sear them on both sides rapidly in hot oil. Season with salt and pepper, then remove the steaks from the pan and keep them warm.
Strain the morels, but reserve the water. Rinse and strain the morels with fresh water several times.
Pour the soak water through a fine sieve into a bowl. Deglaze the gravy in the pan with the soak water and the white wine and then reduce the liquid over high heat. Stir in the crème fraîche, add the morels and bring to the boil again. Cook over low heat for some minutes and season to taste with salt and pepper.
Remove the pan from the heat. Place the steaks into the sauce and let steep for a minute. Serve the beef tenderloin in the morel sauce and sprinkle with chopped chives.
