Cream of broccoli soup with king prawns and cro tons recipe details
Ingredients
4 | king prawns, ready to cook |
3 slice(s) | toast, cut into 1.5cm cubes |
50 g | shallots, chopped |
30 g | butter |
300 g | broccoli, in florets |
600 ml | vegetable stock |
300 ml | single cream |
50 g | sour cream |
salt and freshly ground black pepper | |
nutmeg | |
1 | shallot, chopped |
1 clove(s) | garllic, chopped |
2 tbsp | butter |
Instructions
In a pan, melt the butter and sauté the shallots until lucent. Add the broccoli and pour in the stock. Cook for 15 minutes or until the broccoli is soft. Add the cream and the sour cream and bring to the boil again. Purée the soup. Season to taste with salt, pepper and nutmeg.In a pan, melt the butter. Add the bread cubes, shallot and garlic and roast until the croûtons are golden and crispy all around. Drain on kitchen paper and season with salt.
In a pan, heat some oil and fry the king prawns for a few minutes until pink and just cooked through. Season with salt and pepper.
Divide the king prawns in the soup plates and ladle over the soup. Serve garnished with the croûtons.
