Ingredients

4 tbsp butter
3  eggs
2 tbsp parsley, chopped
250 g spinach
1  bread roll
¼ cup(s) milk
3 tbsp single cream
1 ½ tbsp breadcrumbs
salt and pepper
flour
butter
2 tsp oil

Instructions

Blanch the spinach in salted water, then drain and purée. Soak the bread roll in milk. Whisk the butter until foamy. Preheat the oven to 200°C.

Mix together the spinach, eggs, butter, parsley, soaked bread (squeezed dry), cream and breadcrumbs until well combined. Season with salt and pepper.

Spoon the mixture into buttered and floured ramekins and bake for 15 minutes. Serve immediately.
