Tangelo pudding recipe details
Ingredients
80 g | butter, softened |
2 medium | tangelos, grated zest and juiced |
some | icing sugar |
150 g | caster sugar |
3 medium | eggs, separated |
40 g | self raising flour |
300 ml | milk |
Instructions
Preheat the oven to 170°C.In a large bowl, mix together the butter, caster sugar, tangelo zest and egg yolks until creamy. Stir in the flour, tangelo juice and milk. Mix well, until combined.
In a separate bowl, beat the egg whites until softened. Add to the dough.
Grease an ovenproof dish and pour in the dough. Place the dish in a baking pan, filled halfway with hot water. Bake the tangelo pudding for 55 minutes, until golden.
Remove the pudding from the oven and dust with icing sugar. Serve hot or cold.
