Tandoori Prawns recipe

|500 g||prawns, peeled and deveined|
|200 g||sour cream|
|5 tbsp||Tandoori Masala or curry paste|
|25 g||fresh ginger, grated|
|2 clove(s)||garlic, minced|
|100 ml||vegetable stock|
|500 g||mixed vegetables, e.g. carrot, broccoli, cauliflower, beans|
In a bowl, mix together the sour cream, tandoori masala, ginger, garlic and prawns. Marinate the prawns for 2 hours.
In a saucepan, combine the vegetables and the stock. Cover, bring to a boil and cook over low heat for 10 minutes. Add the prawns and cook for another 3 minutes. Season to taste with tandori masala and salt.
Serve with rice and mango chutney.
