Tandoori chicken on rocket recipe details
Ingredients
4 | chicken breast fillets, each one 200 g |
olive oil | |
Tandoori Masala | |
salt and pepper | |
3 | shallots, finely diced |
1 sprig(s) | rosemary |
1 tsp | tomato puree |
sugar | |
400 ml | port wine |
250 g | rocket |
Instructions
Preheat the oven to 150°C.Season the chicken breast with Tandoori Masala and salt. In a skillet sear the chicken in a little olive oil from all sides.
Place the chicken in a casserole dish and transfer into the preheated oven for 12 minutes.
In the skillet, sauté the diced shallots and add the rosemary and the tomato purée. Add a little sugar and allow to caramelise slightly, then deglaze with the port wine. Cook for approximately 15 minutes until he sauce thickens. Remove the rosemary sprig.
Dress the rocket with olive oil and pepper and arrange on the plates. Carve the chicken and serve on the rocket drizzled with the sauce.
Serve with fresh bread.
