Ingredients

500 g chicken, tenderloin, bite-sized pieces
3 tbsp fish sauce
2 clove(s) garlic, finely chopped
1 tbsp caster sugar
1 ½ tbsp peanut oil
1 small onion, cut into wedges
125 ml tamarind and plum sauce, see database
some sesame seeds, toasted

Instructions

Marinate chicken with the the well mixed fish sauce, garlic and sugar for about one hour.

Heat a wok or heavy based pan and pour in the oil. Add chicken with marinade and stir-fry for about 3 minutes.

Add onion and the tamarind and plum sauce and continue to stir-fry for 5 minutes; or until the sauce has reduced and caramelized.

Serve chicken sprinkled with the sesame seeds, steamed rice and a salad of tomatoes, Lebanese cucumbers and watercress dressed with dipping fish sauce.
