Ingredients
500 g | chicken, tenderloin, bite-sized pieces |
3 tbsp | fish sauce |
2 clove(s) | garlic, finely chopped |
1 tbsp | caster sugar |
1 ½ tbsp | peanut oil |
1 small | onion, cut into wedges |
125 ml | tamarind and plum sauce, see database |
some | sesame seeds, toasted |
Instructions
Marinate chicken with the the well mixed fish sauce, garlic and sugar for about one hour.Heat a wok or heavy based pan and pour in the oil. Add chicken with marinade and stir-fry for about 3 minutes.
Add onion and the tamarind and plum sauce and continue to stir-fry for 5 minutes; or until the sauce has reduced and caramelized.
Serve chicken sprinkled with the sesame seeds, steamed rice and a salad of tomatoes, Lebanese cucumbers and watercress dressed with dipping fish sauce.
