Tamarind and Sesame Chicken recipe

|500 g||chicken, tenderloin, bite-sized pieces|
|3 tbsp||fish sauce|
|2 clove(s)||garlic, finely chopped|
|1 tbsp||caster sugar|
|1 ½ tbsp||peanut oil|
|1 small||onion, cut into wedges|
|125 ml||tamarind and plum sauce, see database|
|some||sesame seeds, toasted|
Marinate chicken with the the well mixed fish sauce, garlic and sugar for about one hour.
Heat a wok or heavy based pan and pour in the oil. Add chicken with marinade and stir-fry for about 3 minutes.
Add onion and the tamarind and plum sauce and continue to stir-fry for 5 minutes; or until the sauce has reduced and caramelized.
Serve chicken sprinkled with the sesame seeds, steamed rice and a salad of tomatoes, Lebanese cucumbers and watercress dressed with dipping fish sauce.
