Amazing, fall-off-the-bone pork roast with authentic Mexican flavor from tomatillos (you can often find them in the grocery store near the jalapenos and other spicy peppers).

Ingredients
Serves: 6- 1 tablespoon coriander seeds
- 1 tablespoon cumin seeds
- 1 (3 to 4 pound) bone-in pork shoulder roast
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon canola oil
- 15 tomatillos, husks removed and chopped
- 1 onion, chopped
- 2 garlic cloves, peeled and halved
- 1 cup white wine
- 8 cups chicken broth
Preparation method
Prep: 20 mins | Cook: 3 hours1. Preheat oven to 350 degrees F.
2. Set a cast-iron skillet over medium heat. Add coriander and cumin seeds; cook for about 2 minutes to toast, then transfer to a mortar and pestle and crush.
3. Rub pork with salt and pepper. Pour oil into a large Dutch oven and set over medium heat. Cook pork in the hot oil until outsides are browned, then set on a plate.
4. Cook tomatillos and onion in the Dutch oven until charred, then stir in garlic, coriander seeds, and cumin seeds and cook for 1 more minute.
5. Drizzle tomatillos with wine and broth. Stir well. When mixture comes to a boil, set the tenderloin in the Dutch oven and place a lid on the pot.
6. Transfer Dutch oven to the oven. Bake for 3 to 3 1/2 hours, until pork is falling off the bone. Serve.
