Ingredients

250 g bulgur
20 g parsley, fresh, chopped
75 g raisins
2  scallions, finely chopped
80 g tomatoes, peeled, cored and diced
30 g green coriander, fresh, chopped
2 tbsp mint,fresh,chopped
60 ml extra virgin olive oil
60 ml lemon juice, fresh
salt
pepper

Instructions

Place bulgur in a bowl and cover with hot water. Leave to swell until soft (approx. for 30 minutes – maybe more).

Toss everything together in a bowl, stir, and add salt and pepper to taste. Cover with a clean dish towel.

Let sit for about 1 – 2 hours before serving.
