Bulgur wheat and lentil pilaf recipe details
Ingredients
3 tbsp | olive oil |
2 bulb(s) | onions, sliced finely |
2 clove(s) | garlic, peeled and crushed |
300 g | Bulgur wheat |
200 g | dried green or Puy lentils |
1 liter(s) | vegetable or chicken stock |
4 tbsp | olive oil |
½ medium | lemon |
25 g | coriander, roughly chopped |
1 medium | pomegranate |
Instructions
Partially cook the lentils for 5 minutes.Cook the onions in the 3 tbsp of oil until soft. Add the garlic and cook for another couple of minutes, then add the bulgur wheat and lentils and stir. Pour in the stock and season.
Bring to the boil then simmer for about 15 minutes, stirring occasionally. When all the liquid has been absorbed, remove from the heat, cover, and stand for 5 minutes.
Add the 4 tbsp of oil, juice from the lemon, and the herbs. Fluff the mixture with a fork then scatter over the pomegranate seeds.
