Flathead with cherry tomato balsamic sauce recipe details
|400 g||flathead fillets, skinless|
|2 tbsp||olive oil|
|2 clove(s)||garlic, thinly sliced|
|250 g||cherry tomatoes, halved|
|2 tbsp||balsamic vinegar|
|some||salt and pepper|
|1 tbsp||basil leaves, shredded|
|2 handful||rocket leaves|
InstructionsHeat 1 tbsp oil in a pan and cook garlic until softened. Add toamatoes and balsamic, season, cover and cook for about 4 minutes until tomatoes soften. Stir in basil leaves.
Meanwhile season the fillets with salt and freshly ground black pepper and heat remaining 1 tbsp oil in a frypan.
Cook fish for about 2 minutes each side until golden brown and cooked through.
Top fish with the sauce and serve with rocket leaves.
