Flathead with cherry tomato balsamic sauce recipe details
Ingredients
400 g | flathead fillets, skinless |
2 tbsp | olive oil |
2 clove(s) | garlic, thinly sliced |
250 g | cherry tomatoes, halved |
2 tbsp | balsamic vinegar |
some | salt and pepper |
1 tbsp | basil leaves, shredded |
2 handful | rocket leaves |
Instructions
Heat 1 tbsp oil in a pan and cook garlic until softened. Add toamatoes and balsamic, season, cover and cook for about 4 minutes until tomatoes soften. Stir in basil leaves.Meanwhile season the fillets with salt and freshly ground black pepper and heat remaining 1 tbsp oil in a frypan.
Cook fish for about 2 minutes each side until golden brown and cooked through.
Top fish with the sauce and serve with rocket leaves.
