Hot and spicy beef and pork stew with bell peppers recipe details
Ingredients
500 g | pork collar, cut into 3cm cubes |
500 g | beef chuck, cut into 3cm cubes |
4 | onions, chopped |
2 clove(s) | garlic, chopped |
2 tbsp | lard |
salt and freshly ground black pepper | |
1 tbsp | tomato puree |
1 tbsp | flour |
300 ml | dry red wine |
400 ml | beef stock |
300 ml | tomato juice |
1 tsp | dried marjoram |
2 | cloves |
5 | juniper berries |
2 | red hot chili peppers, seeded and chopped |
4 | red bell peppers, cleaned and diced |

Instructions
In a mortar, ground the cloves and the juniper berries.In a saucepan heat the lard. Add the meat and fry until browned all around. Add the onions and the garlic and fry until golden. Season with salt and pepper. Add the tomato purée and cook stirring for a minute. Dust with the flour and cook stirring for another minute. Deglaze with the wine, stock and tomato juice. Add the marjoram and the ground spices and bring to a boil. Cover and cook over very low heat for approximately 2 hours or until the meat is very tender.
Add the bell peppers and the chilies and cook for another 15 minutes. Season to taste with salt, pepper and sugar.
Serve with boiled potatoes.
