Ingredients

2  onions, chopped
1 clove(s) garlic, chopped
4 sprig(s) oregano, chopped
1 tbsp oil
600 g ground beef
1 can(s) tomatoes, peeled and diced
salt and freshly ground black pepper
cinnamon
1 pinch(es) sugar
2 tbsp butter
2 tbsp flour
200 ml milk
300 ml vegetable stock
nutmeg
125 g Mozzarella cheese, sliced
1 kg sweet potatoes, peeled and thinly sliced

Instructions

In a pan heat the oil. Fry the mince until crumbly. Add the onions and the garlic and stir-fry for some minutes more. Add the tomatoes and the oregano and season to taste with salt, pepper, sugar and cinnamon. Cover and cook for approximately 1 hour.

In a saucepan melt the butter. Add the flour and cook stirring until pale yellow and smooth. Add the milk and the stock and bring to a boil, stirring constantly with a wire whisk. Cook stirring over low heat for 5 minutes. Season to taste with salt and nutmeg.

Cover the bottom of a buttered casserole dish with sweet potato slices. Spread with the béchamel and add again a layer of sweet potatoes. Divide a layer of the mince sauce on top of the potato layer and repeat the procedure until all is used up. Finish with a layer of mince sauce. Divide the cheese on top. Bake in the preheated oven at 180°C for 30-40 minutes.
