Hearty vegetable soup recipe details
Ingredients
1 tbsp | chives, chopped |
30 g | butter |
1 l | vegetable stock |
2 | carrots, diced |
1 dash(es) | turmeric powder |
1 | onion, diced |
½ bulb(s) | celeriac, diced |
125 g | swede, diced |
250 g | cauliflower, in floret |
salt and pepper | |
1 tbsp | parsley, chopped |
Instructions
In a large saucepan, melt the butter and sauté the onions until soft. Add the remaining vegetables and cook stirring for 4-5 minutes. Season with turmeric. Pour in the stock and bring to a boil. Reduce the heat and cook for 20 minutes. Season to taste with salt and pepper.Serve the soup sprinkled with fresh chives and parsley.
