Ingredients
175 g | unsalted butter, softened |
75 g | sugar |
1 large | egg |
600 g | wholemeal flour |
250 g | plain flour |
2 tbsp | baking powder |
1 tsp | salt |
360 ml | milk, approx |
Instructions
Makes 48 crackers.Preheat oven to Gas Mark 6, 200°C, 400°F. Lightly grease 2, 17×14 inch, 42x35cm baking sheets.
In a large bowl, cream the butter with the sugar until light and frothy then add the egg and beat until light.
Sift the flours into a large bowl with the baking powder and salt. Add to the butter mixture alternating with milk until the dough is well blended. Divide the dough into two equal portions.
Flatten each piece of dough and lightly sprinkle with flour. Roll out to a rectangle of 16×12 inches, 40x30cm and about ¼-inch or 6mm thick. Prick all over with a fork. With a straight knife, mark out 8 rows 2 inches, 5cm apart on the longer side and 3 columns 3-inches, 7.5cm apart along the short side. Do not cut right through.
Bake for 12-16 minutes or until light brown. Remove from the oven and cut the crackers along the scored lines. Separate but leave on the baking sheet. Turn off the oven and return the crackers to crisp for about 10 minutes.
Allow to cool and store in an airtight box.
Eat with cheese or any savoury of choice.
