Super Easy Crockpot Chicken and Dumplings

If you have leftover chicken or turkey… you are 5 minutes and 4 hours away from a bowl of comfort! This is amazingly easy to make and very delicious & filling. The gnocchi almost dissolve and make the soup very thick and tasty. Gnocchi is common here, it is a tiny potato-filled dumpling that is available in the Italian section of major supermarkets.

Ingredients
Serves: 8- 1-2 pounds cooked chicken
- 48 ounces chicken stock
- 16 ounces prepared gnocchi
- 1/2 cup chopped onions
- chopped celery to taste
- salt/pepper to taste
Preparation method
Prep: 5 mins | Cook: 4 hours1. Cook chicken separately or use leftovers, shred or cut into chunks before adding to crockpot. (I boil whatever chicken I have on hand. I use any- even gizzards are good here)
2. Add stock, gnocchi and onions/celery to crockpot. If you want thin soup, boil it separately according to instuctions on package. If thick soup is desired, just dump them in!
3. Cook on high for 3-4 hours or until soup is thickened. Add salt/pepper to taste.
