Ingredients
Serves: 8- 8 slices whole wheat bread, cubed
- 3 cups sliced fresh mushrooms
- 1 medium red onion, chopped
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 8 eggs
- 8 egg whites
- 2 cups fat-free milk
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 2/3 cup shredded Swiss cheese
- 1/2 cup shredded sharp cheddar cheese
- 1 tablespoon Dijon mustard
- 3/4 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon pepper
Preparation method
Prep: 25 mins | Cook: 50 mins | Extra time: 8 hours, chilling1. Coat a 13×9-inch baking dish with nonstick cooking spray. Spread bread cubes out in the bottom of the dish.
2. Pour oil into a large skillet over medium heat. Cook mushrooms and onions in the hot oil for about 6 minutes, then add garlic and continue to cook for about 1 minute longer, until fragrant. Remove from heat.
3. In a mixing bowl, beat the eggs with egg whites and milk until frothy. Add spinach, cheeses, mustard, salt, nutmeg, pepper, and the sauteed mushroom and onion mixture. Stir well, then pour over the bread cubes in the baking dish and distribute evenly.
4. Cover baking dish with foil and place in refrigerator for 8 hours or overnight.
5. Half an hour before you want to bake the dish, remove it from the refrigerator and uncover. Preheat oven to 350 degrees F.
6. Bake for 50 to 60 minutes, remove from oven, and allow to rest for 10 minutes. Slice and serve.
