Ingredients
200 g | dried white beans |
350 g | green beans, trimmed and halved |
salt and pepper | |
1 bunch(es) | spring onions, sliced |
3 clove(s) | garlic, chopped |
2 l | vegetable stock |
4 tbsp | olive oil |
150 g | snow peas |
2 small | courgettes, sliced |
300 g | small pasta |
basil pesto |
Instructions
Soak the white bean in water overnight.The next day, bring the beans to a boil. Cover and simmer for 50 minutes. Add 1 teaspoon of salt. Simmer for 10 more minutes or until the beans are tender.
Cook the pasta until al dente. Drain. Bring the stock to a boil.
In a large saucepan heat the oil and sauté the garlic until lucent. Deglaze with the stock. Bring to a boil and add the green beans. Season with salt. Cover and cook over medium heat for 5 minutes. Add the courgettes and cook for a few more minutes. Stir in the snow peas, the spring onions and the white beans and bring to the boil again. Cook for some more minutes or until the green beans are cooked, but still a bit firm to the bite. Add the pasta and season to taste with salt and pepper.
Ladle the soup into large soup plates and serve garnished with a dab of pesto.
