Sue’s chicken and mashed potatoes recipe

- Ingredients – Chicken
- 6 chicken breasts with skin left on
- Salt and pepper to taste
- 6 Tablespoons Italian dressing
- 6 slices bacon
- Ingredients – Mashed potatoes
- 6 to 8 boiling potatoes, boiled until tender
- 1/2 cup butter
- Salt and pepper
Chicken: Place the washed and dried chicken breasts, skin-side down, in a 9 x 13-inch pan. Drizzle 1 Tablespoon of Italian dressing on each chicken breast. Place a heaping portion of mashed potatoes on each. Place 2 slices of bacon crisscrossed over potatoes on each chicken breast. Bake in a 350-degree oven for 1 hour. Occasionally baste with pan juices. The potatoes should be golden brown when done.
Mashed Potatoes: In a bowl, mash the potatoes with the butter. Season with salt and pepper to taste. Do not add cream or milk.
