Ingredients
Serves: 4- 2 (14 ounce) tubes refrigerated pizza crust
- 10 pieces string cheese
- 1/2 pound boneless skinless chicken breasts, cubed
- 1 small onion, chopped
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1/2 cup chopped pitted black olives
- 1/2 cup oil packed sun dried tomatoes, cut into thin strips
- 1 teaspoon dried rosemary, crushed
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup pizza sauce
- 2 cups shredded mozzarella cheese
Preparation method
Prep: 30 mins | Cook: 12 mins1. Preheat oven to 425 degrees F and coat a rimmed 15×10-inch baking sheet with nonstick cooking spray.
2. Roll out pizza dough and set in the prepared baking sheet, joining the two tubes’ worth by pinching the dough together. The dough will flop over the edges.
3. Line the edges of the dough in the pan with string cheese. Then fold the dough that flops over the edges back into the pan to cover the cheese. Seal by pinching it together with the dough in the pan. Bake for 5 minutes.
4. Pour olive oil into a large skillet and set over medium heat. Cook chicken and onion in the hot oil until chicken is white in the middle and onions are translucent, about 6 minutes. Add garlic, olives, and tomatoes, then season with rosemary, salt, and pepper.
5. Coat cooked crust with pizza sauce. Then arrange chicken tomato mixture on top in an even layer and top with cheese.
6. Bake for about 12 minutes, until pizza is heated through and cheese is bubbly. Slice and serve.
