Ingredients
100 g | soft toffees, chopped |
350 g | butter |
600 g | flour |
350 g | sugar |
salt | |
4 medium | eggs |
2 tsp | baking powder |
5 tbsp | Baileys Irish Cream |
680 g | strawberry jam |
Instructions
In a bowl, combine 150g butter with 200g flour, 150g sugar, the toffees and a pinch of salt. Knead to crumbles. Cover and refrigerate for 15 minutes.In another bowl, combine 200g butter with 200g sugar and a pinch of salt. Add the eggs and the Bailey’s. Sift in 400g flour and the baking powder. Knead until the dough is smooth.
Dust a buttered baking tray with flour. Roll out the dough to line the baking tray. Spread with the strawberry jam. Sprinkle with the crumbles. Bake in the preheated oven at 150°C for 30 minutes.
