Ingredients
125 ml | water |
50 g | butter |
1 pinch(es) | salt |
125 g | flour |
3 | eggs |
7 leaves | gelatin |
350 g | strawberries |
1 tbsp | lemon juice |
250 g | curd cheese |
90 g | sugar |
1 packet(s) | vanilla sugar |
75 g | blueberries, fresh, optional |
200 g | single cream |
2 tsp | icing sugar |
Instructions
Bring the water together with butter and salt to a boil. Add the flour at once and stir with a wooden spoon, until a lump of dough has formed and a white film appears on the bottom of the saucepan. Transfer the dough into a bowl and allow to cool for 10-15 minutes.Preheat the oven to 225°C/ Gas Mark 4.
Place a casserole dish, filled with water onto the lowest rack of the oven.
Add the eggs to the dough, one at a time. Stir well with a wooden spoon after each addition until well combined. Spoon the choux pastry in an icing bag with a large nozzle. Line a baking tray and extrude approximately 8 rings (6-7 cm in diameter) on it. Bake for 25-30 minutes on the middle rack of the oven.
Allow the rings to cool for 2-3 minutes, then cut horizontally and allow to cool completely.
Soak the gelatin in cold water. Purée 250g of the strawberries with the lemon juice. Stir together the curd cheese, sugar and vanilla sugar until smooth. Squeeze the gelatin and dissolve, then stir in the strawberry purée. Stir the gelatin mixture in the curd cheese until well combined. Place the cream in the fridge for 10-15 minutes.
Wash the blueberries and cut the remaining strawberries in slices. Whisk the single cream until stiff and fold the whipped cream into the slightly gelatinising curd cheese. Fill the cream in an icing bag with star nozzle and extrude on the lower halves of the rings. Arrange the fruits on the cream. Slightly press the upper ring on top. Set in the fridge for at least 4 h.
Garnish with icing sugar and serve.
