Curd Cheese Dumplings recipe

|500 g||curd cheese|
|30 g||soft butter|
|1||lemon, grated peel|
|100 g||butter, soft|
In a bowl, mix together the toast crumbs, curd cheese, egg, egg yolks, soft butter, 2 tablespoons of icing sugar, lemon zest and salt. Knead until well combined and pliable. Allow to rest for 2 hours.
Purée the raspberries with 2 tablespoons of icing sugar.
Shape dumplings out of the curd cheese dough. In a saucepan, bring slightly salted water to a boil. Place the dumplings in the water and cook for approximately 12 minutes or until they rise to the surface.
Melt the butter and sauté the breadcrumbs until golden. Turn the cooked dumplings in the breadcrumbs and dust with icing sugar.
Serve the curd cheese dumplings with the raspberry sauce.
