- Ingredients Fruit Topping
- 10 apples, peeled and thinly sliced
- Juice from 1 orange
- 3/4 to 1 cup heavy cream (depends on how juicy you like it)
- 1/2 cup sugar
- 1 Tablespoon ginger
- 1 Tablespoon flour
- 1/2 cup butter
- Pancakes
- 2 cups flour
- 1/4 cup sugar
- 2 Tablespoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cloves
- 2 cups half & half
- 2 eggs
- 1/2 cup butter, melted
- 1 teaspoon vanilla
- Melted butter
- 1 cup chopped walnuts
- Powdered sugar
Fruit Topping: Stir apples and orange juice in large bowl and put in refrigerator for about 1/2 hour, stirring twice. Melt butter in large saute pan over medium heat. Add apples and orange juice and simmer 5 to 7 minutes, stirring gently. Sprinkle ginger over apples and toss to coat. Sprinkle sugar over apples and toss to coat. Add flour to cream and mix well. Slowly add to hot mixture and stir gently until mixture thickens. Allow to simmer 15 to 20 minutes. Make pancakes.
Pancakes:Mix dry ingredients in small bowl. Mix milk and eggs in large bowl. Add dry ingredients and stir until large lumps are gone. Mixture should be slightly thinner than usual pancake batter; add more milk if needed. Add butter and vanilla and stir well. Pour enough batter onto hot griddle to make a 6-inch pancake. Cook until golden brown. Pour some melted butter onto each pancake and roll two pancakes jelly roll fashion onto each plate. Top with about 3/4 cup fruit mixture. Sprinkle some walnuts on top and sprinkle with powdered sugar. Garnish plate with fresh mint if desired.
