Ingredients
10 | dried curry leaves |
10 | green cardamoms, seeds only |
1 tbsp | chilli powder |
For the dried-fried spices: | |
6 tbsp | coriander seeds |
4 tbsp | cumin seeds |
4 tsp | fennel seeds |
1 tsp | whole cloves |
2 ½ | cm piece of cinnamon, break into smaller pieces |
Instructions
Dry-fry the whole spices seperately for 1-3 minutes until fragrant, then tip into a bowl and allow to cool completely.Once cool, add the curry leaves and cardamom seeds and grind to a powder. Mix with chilli powder and store in an airtight container. Makes about 11 tablespoons.
Keeps for 3 months.
