Ingredients
1 kg | yellow summer squash, chopped |
1 medium | onion, chopped |
240 ml | milk |
2 medium | eggs, beaten |
3 tbsp | butter, melted |
3 tbsp | flour |
230 g | Cheddar cheese, grated |
salt and pepper, to taste |
Instructions
Preheat oven to 350°C.Combine squash, onion, and salt in a large saucepan. Cover with water and cook over medium heat until vegetables are tender, about 15-20 minutes. Drain.
Place cooked vegetables in a blender and process until smooth. Transfer back to a bowl and stir in milk, eggs, melted butter, flour and cheese. Mix well. Season to taste with salt and pepper.
Pour mixture into a greased casserole dish and bake for about 30 minutes.
