Ingredients
2 | zucchini, sliced and steamed |
2 | yellow squash, sliced and steamed |
300 g | broccoli florets, steamed |
1 small | red onion, sliced |
60 g | Parmesan cheese, grated |
olive oil | |
salt and pepper, to taste |
Instructions
Steam zucchini and yellow squash together until tender. Remove squash from steamer and immerse in cold water to stop cooking.Steam broccoli until tender and then add into the cold water with the squash and zucchini.
Drain the squashes and the broccoli and place in a bowl. Add the onion and cheese.
Drizzle the olive oil over the salad and season to taste with salt and pepper. Toss well to combine.
