Ingredients
1 Tablespoon salad oil
1 medium onion, sliced
1 medium red pepper, diced
Three 9-ounce packages frozen creamed spinach, thawed
Fresh mushrooms, quartered (optional)
One 15-ounce can whole kernel corn, drained
8 large eggs, beaten
1 brick (10 ounces) Swiss cheese
Instructions:

In 10-inch skillet, heat salad oil, onion, pepper and 3 tablespoons water until vegetables are tender. Cool, then add spinach, corn, and eggs. Preheat oven to 350 degrees. Grease 3-quart glass baking dish. Spoon in half of the spinach mix. Top with half of the cheese. Spoon in the second half of the spinach mix. Top with remaining cheese. Cover with foil. Bake 30 minutes in water bath (Baine Marie) filled halfway. Remove foil. Bake another 30 minutes until knife inserted comes out clean. Cut into portion squares and serve buffet-style.
