Ingredients
125 g | rice |
150 g | carrots, peeled and diced |
salt and freshly ground black pepper | |
1 small | red hot chili pepper, seeded and finely chopped |
2 | shallots, chopped |
3 sprig(s) | parsley, chopped |
8 large | sweetheart cabbage leaves |
600 g | beef mince |
1 | egg |
2 tbsp | oil |
2 tbsp | tomato puree |
500 ml | vegetable stock |
1 tbsp | flour |
paprika powder |
Instructions
Cook the rice in salted water until tender. Blanche the cabbage leaves in salted water for 2-3 minutes. Rinse with cold water and drain.In a bowl combine the minced meat with carrots, egg, rice, parsley, chili and shallots. Season with salt and pepper. Shape to 8 rolls and wrap each roll into a cabbage leaf. Tie with kitchen yarn.
In a large saucepan fry the cabbage rolls in oil until golden all around. Take the cabbage rolls out of the saucepan. Roast the tomato purée briefly in the pan. Deglaze with the stock. Season with salt, pepper and paprika powder. Return the rolls, cover and cook over low-medium heat for 30 minutes. Turn around occasionally.
Remove the rolls form the sauce and keep warm. In a small bowl, stir the flour with 3 tablespoons of water until smooth. Add to the sauce and cook stirring until thickened. Simmer for approximately 5 minutes. Adjust the seasoning.
Serve the rolls drizzled with the sauce.
