spicy rum custard recipe details
Ingredients
300 ml | full fat milk |
300 ml | whipping cream |
1 stick(s) | cinnamon |
4 large | eggs, yolks only |
4 tbsp | caster sugar |
1 tbsp | white rum |
Instructions
Combine milk, cream and cinnamon in a pan and heat gently. Stir and then remove from heat, cover with a lid and allow to sit for 15 minutes. Discard cinnamon stick.Beat the egg yolks with the sugar and rum until creamy and well mixed.
Reheat the milk mixture until just below boiling point. Then add to bowl with the egg mixture, whisking all the time to prevent lumps from forming.
Pour the custard back into the saucepan and continue to whisk until the sauce thickens. Serve immediately.
