Ingredients
Serves: 4- 1 pound pasta
- 3 tablespoons olive oil
- 2 cloves garlic, coarsely chopped
- 3 large fresh tomatoes, peeled and chopped
- 1/2 cup black olives, pits removed
- 2 tablespoons capers, drained
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried red pepper flakes
- Black pepper, to taste
- 2 tablespoons parsley, chopped
- 4 flat anchovy fillets, chopped
Preparation method
Prep: 10 mins | Cook: 18 mins1. Bring a large pot of salted water to boil over high heat. Add pasta and cook until al dente, according to package directions. Drain. Meanwhile, make the sauce:
2. Pour oil into a skillet and set over medium heat. When oil is hot, add garlic, tomatoes, olives, capers, oregano, and red pepper flakes. Cook in hot oil for about 15 minutes to thicken, stirring fairly constantly.
3. Add black pepper to your liking, then stir in parsley and anchovies. Cook for another few minutes to heat through.
4. Toss pasta with sauce and serve.
