Purslane salad recipe details
Ingredients
500 g | purslane |
2 | tomatoes |
1 | cucumber |
1 | onion |
salt | |
1 tbsp | sumac |
2 clove(s) | garlic |
250 g | mild yoghurt |
1 tbsp | dill, finely chopped |
3 tbsp | extra virgin olive oil |
Instructions
Wash then spin-dry the purslane. Place the leaves into a bowl. Carve the tomatoes, put into hot water for 30 seconds, then peel and dice. Wash, peel and finely slice the cucumber. Add both to the purslane.In a separate bowl, sprinkle the sliced onion with salt and sumac and mix well. Add to the salad.
Press the garlic into the yoghurt. Add the dill and the olive oil and stir well.
Pour the yoghurt dressing over the salad and gently toss.
