Ingredients
1 handful | okra, chopped |
100 g | basmati rice |
350 ml | chicken stock |
¼ | onion, chopped |
½ | red chili, chopped |
1 tbsp | olive oil |
salt and freshly ground black pepper, to taste |
Instructions
In a saucepan, heat oil and fry the onion and chili for 2-4 minutes. Stir in okra and rice. Add the chicken stock and bring the mixture to a boil. Stir well. At low heat, cook for 11 minutes or until the rice is tender.Season with salt and freshly ground black pepper. Serve warm.
