Ingredients
400 g | small pasta |
2 clove(s) | garlic, minced |
2 | spring onions, sliced |
3 tbsp | olive oil |
500 g | lamb mince |
salt and freshly ground black pepper | |
2 tbsp | tomato puree |
300 ml | vegetable stock |
1 can(s) | tomatoes, diced |
60 g | raisins |
2 tsp | curry powder |
40 g | pistachios, roughly chopped |
cumin | |
chili powder | |
sugar |
Instructions
In a saucepan, heat the oil and stir-fry the lamb mince until brown and crumbly. Add onions and garlic and fry for some more minutes. Season with salt and pepper. Stir in the tomato purée and cook for another minute. Add the stock and bring to a boil. Stir in the tomatoes, raisins and the curry, reduce the heat and simmer for 10 minutes.Cook the pasta in salted water until al dente. Drain, add to the stew and toss. Stir in the pistachios and season to taste with salt, pepper, sugar, chili and cumin.
