Beef and bean goulash recipe details
Ingredients
130 g | black beans |
1 kg | beef for stew, diced |
300 g | onion, chopped |
1 | carrot, sliced |
1 | leek, sliced |
800 g | tomatoes, diced |
4 tbsp | oil |
salt and pepper | |
paprika powder | |
2 tbsp | tomato paste |
2 tbsp | flour |
130 ml | red wine |
1 l | beef stock |
1 | bay leaf |
½ bunch(es) | thyme, chopped leaves |
Tabasco sauce | |
200 g | sour cream |
Instructions
In a saucepan, cover the beans with water and bring to a boil. Remove from the heat and allow to soak for 1 hour.In a large saucpan, fry the beef in oil over high heat for 5 minutes. Season with salt and pepper. Remove the meat and set aside.
In the same pan, sauté the onions, carrots and leek over medium heat for 5 minutes. Return the beef into the pan and add some paprika powder, tomato paste and flour. Cook stirring for 5 minutes, then pour in the wine, stock and tomatoes and add the bay leaf and thyme. Bring to the boil and simmer over low heat for at least 1 hour or until the meat is tender.
Drain the beans and add to the soup. Simmer for another 15-20 minutes or until the beans are done. Season to taste with paprika powder, salt, pepper and Tabasco.
Serve sour cream to the goulash.
