Ingredients

130 g black beans
1 kg beef for stew, diced
300 g onion, chopped
1  carrot, sliced
1  leek, sliced
800 g tomatoes, diced
4 tbsp oil
salt and pepper
paprika powder
2 tbsp tomato paste
2 tbsp flour
130 ml red wine
1 l beef stock
1  bay leaf
½ bunch(es) thyme, chopped leaves
Tabasco sauce
200 g sour cream

Instructions

In a saucepan, cover the beans with water and bring to a boil. Remove from the heat and allow to soak for 1 hour.

In a large saucpan, fry the beef in oil over high heat for 5 minutes. Season with salt and pepper. Remove the meat and set aside.

In the same pan, sauté the onions, carrots and leek over medium heat for 5 minutes. Return the beef into the pan and add some paprika powder, tomato paste and flour. Cook stirring for 5 minutes, then pour in the wine, stock and tomatoes and add the bay leaf and thyme. Bring to the boil and simmer over low heat for at least 1 hour or until the meat is tender.

Drain the beans and add to the soup. Simmer for another 15-20 minutes or until the beans are done. Season to taste with paprika powder, salt, pepper and Tabasco.

Serve sour cream to the goulash.
