This is a festive, colorful low-fat recipe for a quick and easy rice hotdish.

Ingredients
Serves: 8- 1 pound fresh ground turkey
- 1 medium yellow onion, chopped
- 1 green pepper, chopped
- 1 teaspoon ground black pepper
- 1/2 cups basmati rice
- 1/4 cups wild rice
- 1/4 cups dried orzo pasta
- 2 teaspoon extra virgin olive oil
- 1/2 cups mushrooms, sliced
- 1/2 cups chicken stock
- 1 (15 ounce) can diced tomatoes
- 1 (8 ounce) can tomato sauce
Preparation method
Prep: 10 mins | Cook: 25 mins1. Saute turkey, onions, green pepper, and black pepper in large skillet; drain.
2. Brown basmati rice, wild rice, and orzo with olive oil in a small skillet.
3. Combine the turkey mixture with the browned rice mixture in large skillet. Stir in diced tomatoes, tomato sauce, chicken stock and mushrooms. Bring just to a boil, then cover, reduce heat and simmer until rice is tender, about 25 minutes.
