Ingredients
Makes: 5 cups- 6 ears of corn, husks removed
- 1 large onion, chopped
- 1 jalapeno pepper, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons butter
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/2 teaspoon chili powder
- 2 cups shredded Monterey Jack cheese
Preparation method
Prep: 25 mins | Cook: 30 mins1. Preheat grill to medium and preheat oven to 400 degrees F and coat a 2 quart baking dish with nonstick cooking spray.
2. Grill corn for about 12 minutes, turning every few minutes, until corn is cooked through and tender. Cool slightly, then slice the kernels off the cob.
3. Melt butter in a large skillet over medium heat. Cook onion, jalapeno, and garlic in melted butter for about 3 minutes, then stir in the corn kernels. Continue to cook for 2 more minutes, until onion and jalapeno are softened.
4. Whip the mayonnaise with sour cream and chili powder in a mixing bowl, then pour in the cooked vegetables and cheese. Stir well, then pour into prepared baking dish.
5. Bake for 30 minutes until lightly browned. Serve with tortilla chips.
