Grilled salmon packets with veggies recipe details

Ingredients
Serves: 4- 4 (6 ounce) salmon steaks
- 1 teaspoon lemon-pepper
- 1 cup shredded carrots
- 1/2 cup thinly sliced yellow bell pepper
- 1/2 cup thinly sliced green bell pepper
- 4 teaspoons lemon juice
- 1 teaspoon dried parsley flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Preparation method
Prep: 15 mins | Cook: 20 mins1. Preheat grill to medium heat and measure out 8 (12×12-inch) lengths of aluminum foil.
2. Make four stacks of two pieces of foil each. Set a salmon steak on each, dust with lemon pepper, then distribute carrots and bell peppers among the stacks.
3. In a bowl, whisk lemon juice together with parsley, salt, and pepper. Pour over each salmon and vegetable pile. Fold foil into a sealed packet around the ingredients.
4. Set packets on the grill and close lid. Cook for about 18 minutes, until salmon flakes easily and vegetables are tender. Serve.
